Lemon Melting Moments …Made by my Daughter – J.D

 

 

Make 32
INGREDIENTS:
-250gr unsalted butter,softened
-1tsp vanilla essence
-1/2 cup icing sugar ,sifted
-2 cup plain flour
-1/3 cup cornflour
LEMON FILLING:
-60gr butter ,softened
-1large lemon (juice)
-1cup icing sugar
METHOD:
-Preheat oven to 160 c .Line 2 baking tray with non -stick paper
-Using an electric mixer,cream butter,vanilla and icing sugar until light and fluffy
-Sift flour over butter mixer
-Beat on low speed until a soft dough forms
-Roll heaped teaspoonful of miture into small balls.Place on trays
-Using a fork dippeed in flour ,lightly flatten each biscuit until 1cm thick
-Bake for 15 minutes or until firm.cool on trays for 10 minutes
-Transfer to a wire rack to cool comletly
MAKE LEMON FILLING:
-Using an electric mixer beat butter until light and fluffy
-Stir in lemon juice and icing sugar
-Spread flat side of 1 biscuit with 1tsp filling
-Top with another biscuit
-Repeat with remaining biscuits and filling(Dust with icing sugar ,if you like).Serve
NOTE:
-Time plan:up to 2 days before -Make the melting moments .Store at room temperute in airtight container lined with foil.
